Sure a cookie can, it's all about balance.
Don't get me wrong, I loooove a good sweet treat but these days everything is packed with sugar and sodium.
Here's a superfood cookie for you, it's gluten free, sugar free and is still yummy. My kids (extremely fussy eaters) like them. Don't worry, they may look too dark but it's just chia seed.
Warning: These contain Butter (like I said "Balance" ?
Prep time 5min, Bake time 7-10min
Oven temp: 170*C
1/4 C Honey
1/2 t Baking Soda
1/2 C Desiccated Coconut
1/2 C Chia seeds - finely ground
3/4 C GF Rolled Oats
1 T Rice flour
1/2 t Xantham gum (optional)
Turn oven on and prep 2 sheets of baking paper. Place on piece onto a baking tray.
Melt together honey and butter, cool slightly then add baking soda.
Mix in dry ingredients.
Drop teaspoon amounts of mixture onto prepped tray, 4 cm gap between each cookie.
Place in the oven for 7-10min, keep an eye on them and when they're a dark golden - wait another minute. Haha. Slide the paper and cookies onto a cooling rack. This will help the cookies to keep shape as they'll still be very soft until cooled.
Repeat with a fresh sheet of baking paper.
Cool and enjoy with a nice cup of Earl Grey.
Note: You can use regular Oats, oats are gluten free but may contain trace elements of gluten depending on where they are packaged.
